Ingredients
 

  • 2 large potatoes
  • 4 cups plain flour
  • 1 cup spinach
  • 1 tsp salt

Instructions

  • Boil the potatoes until soft and tender (you can also bake if you prefer)
  • Mash them gooood. Add the flour and salt - add flour gradually as you may need less or more until a dough forms.
  • Blend the spinach with a tiny bit of water so it becomes pourable. Add to the bowl but add small amounts gradually as you donโ€™t want to add too much water. Once a dough is formed transfer to a floured surface.
  • Cut into 4 equal pieces and roll each piece out into a rope. Cut into small bite sized pieces. Repeat with remaining pieces.
  • You can leave the pieces as is or to get more texture, roll each small piece along the back of a fork gently (Iโ€™ll put a video in my story of this)
  • To cook bring a pot of water to the boil and add salt. Add gnocchi, stir gently and let it cook until they all float to the top. Let it cook for a further minute and drain. Serve with tomato sauce (or whatever youโ€™d like)

Notes

To freeze, place gnocchi in a container while raw. When you want to cook it just add to boiling water frozen, no need to defrost as this will make them all stick together.

Spicy Tomato Gnocchi

Another #pantryfriendly recipe: spicy tomato gnocchi with white beans, spinach & vegan sausage!

Use frozen veggies if you canโ€™t get spinach or use frozen vegan chicken instead of sausage (however I highly recommend using vegan sausage). The sauce, white beans & gnocchi are all shelf stable so you will be good to go!

Ingredients
 

  • 1 jar Goods Classic Spicy Sauce
  • 1 16 oz Package Shelf Stable Gnocchi
  • 1 15 oz Can White Beans
  • 1 13 oz Package Vegan Sausage (I like Field Roast Apple Sage)
  • 1 5 oz Package Spinach
  • 1/4 tsp Salt
  • 1/4 tsp black pepper
  • 1/4 tsp Garlic Powder

Instructions

  • Bring a large pot salted of water to a boil. Meanwhile, cut your sausages into bite sized pieces. Also, rinse and drain your beans. Set aside.
  • As your water is coming to a boil, begin cooking your sausages. Heat up a large sautรฉ pan on medium heat with a little oil. Cook sausages for 7-10 minutes, or until browned.
  • After 10 minutes, take your sausages off of the heat and put on a plate lined with some paper towels to remove any excess oil. If your water is boiling, add your gnocchi and cook according to package instructions(mine takes 2 minutes).
  • While the gnocchi is cooking, add your spinach to the sautรฉ pan. Add in some salt, pepper and garlic powder to taste. When the spinach is wilted, lower heat and add back in the sausage. Drain your gnocchi and add to the sautรฉ pan. Throw in your beans and Jar Goods sauce. Mix to combine and serve!
  • Enjoy!

  • Prepare Sun-Dried Tomato Pesto according to recipe. Set aside.
  • Bring a large pot of water to a boil. Cook gnocchi according to package instructions. Drain and set aside.
  • While water is coming to a boil, place a pan on the stove over medium heat. Add butter, olive oil and garlic to the pan. Saute until butter is melted and garlic is fragrant.
  • Combine corn starch and 2 tsp. of milk in a small bowl and whisk until smooth.
  • Add remaining almond milk, corn starch mixture and pesto to the pan. Stir until sauce begins to thicken. Turn heat off.
  • Add cooked gnocchi, salt and pepper to the pan and stir to combine. Taste and adjust seasoning as needed.
  • Serve with fresh basil and vegan parmesan on top.

Sweet Potato Gnocchi

Ingredients
 

  • 2 1/2 lbs peeled sweet potatoes
  • 2 1/4 cup chickpea flour (and a little more for dusting)
  • 1/2 cup tapioca flour (more for dusting)
  • 1/2 cup arrowroot flour
  • 1 tsp Himilayan salt
  • 1/8 tsp black pepper

Instructions

  • Peel and chop the sweet potatoes, boil them in a pot with salted water. When they are soft and done you can mash the potatoes and let them cool down.
  • Add the flours, seasoning and start kneading with your hands until a dough forms.
  • If the dough gets to sticky at this point you can add more chickpea flour and knead some more.
  • Cut the dough into 4 Equal sizes. One by one form a long thick noodle and than cut small pieces and roll them on to the gnocchi molder.
  • Get another pot of salt water ready and add your gnocchi when the water boils and cook until they get at the surface (3 to 4 min max).
  • Transfer the gnocchi after they are boiled to a heated pan & 1 tbsp (or more ) plant based butter . Add fresh thyme and sage for extra flavor and cook for a few minutes for more of a crispy texture. (approx 5-6 min)
  • Enjoy!
