I use a simple technique to cook the bok choy to achieve the perfect texture and to retain the greenery of the Bok Choy!

- Bring a pot of water to boil. Once the water is boiling drizzle some oil and salt.
- Blanch the bok choy for about 2 minutes, quickly remove from the boiling water and soak in cold water to stop the cooking process.
- Heat oil in a wok, sauté the garlic & fresh chilli till fragrant. Add in the sauce ingredients and cornstarch slurry to thicken the sauce.
- Lastly pour the sauce on the bok choy and serve immediately.
