Smashed Broccoli

Ingredients
- 1 broccoli head
- 3 tbsp olive oil
- 1/4 tsp salt (adjustable)
- 1/4 tsp chili flakes (adjustable)
- 1/4 tsp pepper (adjustable)
- 1/2 cup grated plant-based cheese
Instructions
- Steam the broccoli florets for 3 minutes. They should soften, but still have a bite to them. Slice them and let them dry completely.
- Drizzle a lined baking tray with olive oil and sprinkle with your choice of cheese. You can also use a stainless steel baking tray without the parchment paper to make them extra crispy. Distribute the broccoli florets evenly and smash them with a jar or cup. Season with salt, pepper, and optionally chili flakes.
- Bake in the preheated oven at 400 degrees F for about 25 minutes until crispy.
- Let it cool for a bit and carefully peel the baking paper off. Break into pieces and enjoy immediately.
