Citrus Orange Tofu with Brussels Sprouts

Instructions

Tofu

  • Prepare your tofu of choice.
  • Whisk your corn starch and water together first and add the remaining ingredients together with it. 
  • Heat in a skillet over medium heat and add your tofu into the pan tossing to coat until the sauce begins to thicken. ⁣

Rest of the bowl (optional)

  • Toss the halved Brussels in a little olive oil, salt and pepper and roast at 425 degrees for ~20 minutes, until crisp. ⁣
  • For the cauliflower, toss in coconut oil, season with turmeric, garlic powder, onion powder, salt and pepper, and a splash of tamari. Toss to coat. Bake on the same pan with the Brussels sprouts for about 15-20 minutes. ⁣

Notes

I served everything with quinoa cooked in broth ⚡️

Thai Basil Chili Tofu

Ingredients
 

  • 16 oz firm tofu drained & cut into cubes
  • 1 tbsp ginger finely chopped
  • 1 tbsp garlic finely chopped
  • 1 tbsp red jalapeño chopped
  • 1/2 cup packed Thai basil
  • neutral oil
  • salt to taste
  • grain your favorite

Sauce

Instructions

  • Mix all the sauce ingredients together until they're well combined. Then set aside.
  • In a heated non-stick pan with 2 teaspoons oil, pan fry tofu cubes until lightly brown on all sides by flipping occasionally, then season with a pinch of salt. Transfer tofu to a bowl & let cool.⁣⁣
  • Using the same pan, add another teaspoon of oil, saute ginger, then garlic until fragrant & add in chopped red jalapeno. Add in tofu, sauce then basil & toss them quickly using a spatula until all tofu is coated with sauce.
  • Season accordingly if needed. Serve warm with your favorite grain.⁣⁣
