Creamy Mushroom Pasta

Ingredients
 

  • 250 gram (9 oz) button mushrooms sliced
  • 1 yellow onion finely chopped
  • 2 cloves garlic minced
  • 1 small bunch fresh thyme roughly chopped
  • 50 ml (1.7 oz) white whine (optional)
  • 100 ml (3.4 oz) oat-based cooking cream (can be substituted with other plant-based cooking cream of preference)⁣
  • 100 ml (3.4 oz) oat milk
  • 1 1/2 tbsp nutritional yeast
  • 1 1/2 tsp corn starch
  • salt and pepper to taste
  • 1 tbsp veg. oil or plant-based butter for frying
  • 200 gram (7 oz) gluten-free & vegan pasta (I used brown rice & quinoa pasta)
  • fresh thyme, vegan parm, flaky sea salt and cracked pepper⁣⁣ optional for topping

Instructions

  • Cook pasta in accordance with package instructions.⁣
  • Heat oil or butter in a skillet, sauté onions and garlic on medium heat until onions are translucent. Then add the mushrooms and fry until slightly crispy and browned.
  • Add mustard, thyme, white wine and salt & pepper. Stir fry on high heat for a couple of minutes until the alcohol has cooked off then add the cooking cream, 100 ml oat milk and nutritional yeast, let simmer on medium low heat for 5 minutes.
  • Mix 2 tbsp oat milk with the corn starch in a small glass and add to the sauce, keep stirring until the sauce has thickened (1-2 minutes).
  • Drain pasta and mix with the sauce. Add toppings and serve!

Creamy Tomato Chickpea Pasta

Creamy Tomato Chickpea Pasta

Ingredients
 

  • 200 gram pasta of choice - gluten-free
  • 1 carrot peeled and chopped
  • 1/2 green bell pepper chopped
  • 1 tsp paprika
  • 200 ml tomato passata (or chopped tomatoes)
  • 2 tbsp nutritional yeast
  • 1 can chickpeas drained and rinsed
  • 2 tbsp tamari
  • 2-3 tbsp hemp seeds
  • 2 cups spinach
  • 1/4 cup grated vegan cheese (optional)

Instructions

  • Cook the pasta according to packaging instructions. Meanwhile, add the carrot, bell pepper and paprika to a non-stick frying pan and sauté for 3-4 minutes, until softened and fragrant.
  • Next, pout in the passata and add the nutritional yeast. Stir well, then add the chickpeas and tamari and simmer for a further 2-3 minutes.
  • Drain and rinse the pasta, then add it to the frying pan together with the hemp seeds, spinach and optional vegan cheese. Stir until the spinach wilts and serve.

Creamy Mushroom & Chickpea Pasta

This is a ridiculously comforting bowl of pastais a delicious smokey, meat-free recipe that’ll satisfy everyone you know and whipped up in no time.

Instructions

  • Fry off the onion and garlic in some olive oil in a large frying pan. Cook for 5 minutes before adding the mushrooms and cook for 5 minutes.
  • Add in the smoked paprika and curry powder and stir. Pour in the chickpeas, tomato passata and coconut milk, bring to the boil and simmer for 10 minutes. Add the peas after 5 minutes and season with salt and black pepper.
  • Cook the pasta according to packet instructions – save a splash of cooking water!
  • Add the pasta into the sauce with the spinach and a splash of cooking water. Stir to wilt the leaves and serve warm.
