A knish makes a perfect snack, app, lunch, or even a light dinner with soup & salad. In this recipe, mashed sweet potatoes are combined with caramelized onions, spinach & warming/sweet spices.
Bake sweet potatoes on rack at 350 F till fork tender 30-40 min. Let cool & peel skin using fork
On stovetop using a large Dutch oven, heat 1/4 cup broth on high, when it starts to boil, add onions, lower heat to med & stir frequently, when broth has evaporated & onions start to stick, add another 1/4 cup broth. Repeat process for about 20 min until onions are caramelized. Then add spinach, stirring until wilted, 1-2 min, scraping up any brown bits from the bottom of the pot
